From Serving in Afghanistan to Serving Nutritious Food

Morristown, N.J. (May 21, 2018) – Tristan Symons, '21, values his education from the College of Saint Elizabeth so much that he doesn't mind travelling over 120 miles to class each day.

"CSE has the best Foods and Nutrition program in New Jersey," says Symons, who lives in Easton, Pa. "The two-hour roundtrip commute is worth it."

However, Symons is no stranger to personal sacrifice. For four years, he served as a Corporal in the United States Marine Corps and was deployed to Marjah, Afghanistan in 2012. While deployed, Symons operated as an infantry assaultman and his team assisted efforts to eradicate the Taliban.

After completing his service, Symons began studying at Raritan Valley Community College before realizing he wanted to dedicate his life to nutrition and transferred to CSE.

"I've always liked educating people and helping them improve their lives, so nutrition felt like a natural fit," Symons explains. "A Foods and Nutrition degree is really versatile. I can teach, advise people on their personal nutrition, consult at a gym or supermarket. The opportunities are endless."

Symons felt that CSE was the right school for him because of the personal attention from professors and the friendly nature of the campus.

"I like CSE because it's a small, close-knit school in a nice area and you get to know everyone," he says.

In addition to a B.S. in Foods and Nutrition, CSE offers an online M.S. in Nutrition, a combined B.S./M.S. in Nutrition, a combined M.S. in Nutrition/Dietetic Internship Program, and a Certificate in Sports Nutrition and Wellness.
